"Of all the super healthy greens, kale is the king. It is definitely one of the heathiest and most nutritious plant foods there is. It is loaded with all sorts of beneficial compounds...some of which have powerful medicinal properties."
~ KRIS GUNNARS, BSC.
Dark leafy greens are nutritional powerhouses, having probably the most concentrated source of nutrition of ANY food, and are a REALLY important component to a healthy diet.
Kale is a strong, bitter green that can be sauteed, baked, used in soups and stews, and as a staple in green smoothies and fresh juices. It is also wonderful in salads - the trick to turning this bitter and tough green to sweet and tender is to massage it with a little sea salt!
This easy, delicious, and nutritious recipe is always a hit. Give it a try - you'll be glad you did!
Mediterranean Kale Salad - recipe by Leslie Marioni
- 2 small bunches dinosaur kale, stems removed
- 3/4 tsp sea salt
- 2 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- 1/4 tsp black pepper
- 1/4 cup raw pine nuts
- 14 cup golden raisins, soaked 10 minutes, drained & rinsed
Stack 2 leaves of kale and role tightly. Cut the kale crosswise into very thin strips. Repeat with the remaining leaves of kale. Add 1/2 tsp of sea salt and massage well with your hands, in order to soften the kale. Add the lemon juice, olive oil, remaining 1/4 tsp salt, and black pepper, and toss well with your hands, working the dressing into the greens. Gently toss in the pine nuts and raisins. Enjoy!
