Mediterranean Kale Salad

Dark leafy greens are nutritional powerhouses, having probably the most concentrated source of nutrition of ANY food, and are a REALLY important component to a healthy diet.

Kale is a strong, bitter green that can be sauteed, baked, used in soups and stews, and as a staple in green smoothies and fresh juices. It is also wonderful in salads - the trick to turning this bitter and tough green to sweet and tender is to massage it with a little sea salt!  

This easy, delicious, and nutritious recipe is always a hit.  Give it a try - you'll be glad you did!

 

Mediterranean Kale Salad - recipe by Leslie Marioni

  • 2 small bunches dinosaur kale, stems removed
  • 3/4 tsp sea salt
  • 2 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • 1/4 tsp black pepper
  • 1/4 cup raw pine nuts
  • 14 cup golden raisins, soaked 10 minutes, drained & rinsed

Stack 2 leaves of kale and role tightly. Cut the kale crosswise into very thin strips. Repeat with the remaining leaves of kale. Add 1/2 tsp of sea salt and massage well with your hands, in order to soften the kale. Add the lemon juice, olive oil, remaining 1/4 tsp salt, and black pepper, and toss well with your hands, working the dressing into the greens. Gently toss in the pine nuts and raisins. Enjoy!
