Eggs have been given a "bad rap" - being linked to contributing to high cholesterol levels - but it "just ain't so"! They are a great source of protein that is easily digested and assimilated, and adding a variety of vegetables and a starch (like potatoes or cooked grains) adds extra flavor and nutrition for a delicious, balanced meal.
JoAnn's Veggie Scramble
Heat olive oil in a skillet over medium-high heat. Add veggies of your choice (onions, peppers, zucchini, mushrooms, spinach, potatoes, etc.) and saute until crisp tender. Whisk eggs in a mixing bowl and add to vegetables, using a spatula to stir/fold it together until eggs are cooked to desired doneness. Season to taste with salt and pepper, and top with diced tomato and/or avocado. Enjoy!
